The menu changes seasonally and is inspired by technique and tradition.

"The ingredients come from different regions of the Peruvian Amazon, honoring responsible consumption, fair trade, and sustainability. AWA is the beginning of the word AWAJUN, a living Amazonian ethnic group. It is also a play on words that evokes agua (water), which is life."
